  • 4 Reasons Why You Love Samosa

4 Reasons Why You Love Samosa

Walk into the nooks and crannies of North India and you will not be able to find a single human being whose lips have not touched the crisp crust and gooey filling of heaven that is in a triangular shape. This lip smacking snack is none other than the humble samosa. We can just wonder why no Indian Neruda has written an ode to it! Samosa is a snack that is made by simple ingredients such as flour, potatoes, peas, salt and other spices. A filling of mashed boiled potatoes is created and spices added to it, in order to give it a flavour to die for. Thin rotis of the kneaded dough are rolled out and the filling goes into it as the dough neatly hugs it from all the sides in the shape of a triangle. This is one snack that everyone loves to have! This delicacy from India has started gaining a fan following overseas too. So much for gluttony! Here, we bring to you the reasons behind this mania for samosas:

    1. Easily Available

    omnipresent

Go to any part of North India and you are bound to find a person selling samosa. It is one thing which is found in a properly air conditioned and hygienic food chain as well as at a roadside stall. This snack is absolutely omnipotent in nature. It is so easily available that you simply cannot say no to this delicacy. It is said that if you do not like something in the beginning but if you keep on doing that repeatedly, you eventually develop a taste for it and get addicted to it. So, if you are getting a thing at every corner of your city, then how can you ever dislike it? Thus, the samosa available everywhere is one which you just cannot miss. The next time you come across a place with samosas, go grab them.

    2. Pocket Friendly

    pocket friendly

We all love delicious pizzas and sandwiches of high end restaurants and cafes. However, as it is said with great power comes great responsibility. In the similar way, with great food comes great price! But, there is an exception. There is a snack which is so delicious and yet, so cheap. Even in today’s world where a mere cell phone costs a humongous fifty thousand rupees, having something to eat which is so reasonable can just be treated like a blessing from heaven. The humble samosa is available at Rs. 5 to Rs. 10 at some places even today! Ask any college student to name the thing which he/she loves to eat and that person will simply give out two names, Maggi and Samosa! We all know there is a tough fight between the two but given the price for both, you can always be sure that a samosa will never burn a hole in your pocket.

    3. Gluttony

    lovee food

As the Bible says, we are sinners and as Satan says, if we are born sinners then we must sin. With the Supernaturals series getting hold of the attention of our generation completely, it is no challenge to guess whose side are we going to choose. Satan, it is! Eating a lot is definitely an inseparable part of your life. Or in fact, to put it in better terms, you do not eat to live, but live to eat or why would you be scanning this website right now! Samosa is a snack that is deep fried and oozes with glistening oil. That definitely does not guarantee a healthy body but the way its palatable nature satiates one’s hunger is beyond the realm of mortals. The unhealthy snacks are the tastiest snacks ever and that is no news to anyone. The same goes for Samosas. This Indian junk food is bound to get you up on your toes to satisfy those desperate pangs of hunger when you just want to eat something really fried and heavy.

    4. Avant-garde

    avant garde

If you are a foodie then you must have had experimented with your food and tried erratic combinations that made your not-so-foody (read boring) friends puke and faint at the same time. Samosa is one snack that you can combine with any damn thing on the planet and it would taste just better than before. This avant garde aspect of samosas make them the object of envy for all the other cuisines. One can have a samosa in a simple way with chutney or go one step further and eat it with a gravy based dish made of chickpeas. There are many parts oin India, such as Gujarat and Rajasthan mainly, where the breakfast of samosa and jalebi is the norm. The crispness and spicy flavour of the samosas have the divine soulmate in the form of sweet jalebis. These variants of the simple samosa make it a snack that is meant to be the food of the nation. Nay, food of the world!

  • Baking A Cake – Do it YOUR Way!

Baking A Cake – Do it YOUR Way!

While baking a cake, I love to experiment and try out new stuff. Maybe add some blueberries or crushed almonds or simply drizzle some fruity syrup over the plain old basic cake – Anything. Anything and everything will do. Gradually you inherit the good sense of what goes with what. And if not, what’s life without a few mistakes, or in this case, a few badly turned / burnt cakes?

First, you need to know how to bake the basic cake. Once that foundation is made, it is easier to branch out, give a solid structure to your new ideas and bake.

Here are a few extremely basic age-old favourite cakes. Feel free to dab in your innovative ideas anywhere.

Let’s start with the basic Vanilla Sponge Cake. It is pretty easy to make and you can tempt your inner creative genius to work. (I usually add some raisins and cashew nuts to it.)

    Vanilla Sponge Cake

    BasicS4

    Time: 45 minutes

    Serves: 8 to 10

Ingredients: 200g plain flour, 2 tablespoons cornflour, 200g caster sugar, 2 teaspoons baking powder, 1/2 teaspoon salt, 70g margarine,150ml milk, 1 teaspoon vanilla extract,1 egg

Method: Preheat oven to 180 C / Gas 4. Grease and flour a 20cm square tin.Sieve flour, cornflour, sugar, baking powder and salt into a large bowl. Add margarine and milk. Princess Cake (this cake was invented in the 1930s )

    Time: 1 hour

    Serves: 8 to 10

Ingredients: 1 ready-made 18cm round vanilla sponge cake, 500ml double cream, 200ml thick vanilla custard, 3 tbsp raspberry jam, 200g fresh raspberries, 350g marzipan (coloured pale green), icing sugar (for dusting)

Method: Using a sharp serrated knife, cut the sponge cake through the middle into3 layers. Whip the cream until stiff. Spread a thin layer of cream on top of the bottom cake layer, then carefully spread over the vanilla custard within 2cm of the edge. Spread the raspberry jam on top of the middle cake layer and arrange about half the raspberries in the centre. Place on top of the bottom cake. Position the final top layer of the cake on top of the raspberries. Using a palette knife, spread a little of the whipped cream around the side of the cake. Keep the best-looking raspberry for decoration, pile up the remainder in the centre, then cover these with the remaining cream. Try to create a dome effect across the top of the cake. On a surface dusted with icing sugar, roll the marzipan to a circle large enough to cover the cake completely. Carellfully drape it over and gently smooth it in place, letting it fall into neat folds. Using scissors, trim away any excess marzipan around the base. Sit your star raspberry on top, then dust with icing.

    Basic Chocolate Cake

    Time: 1 hour

    Serves: 9 – 10 people

Ingredients: Cooking Spray, 1 cup unsweetened cocoa powder, 1 ½ cups all-purpose flour, 2 cups sugar, 1 ½ tsp baking powder, 1 tsp baking soda, 1 tsp salt, 3 large eggs, ¾ cup vegetable oil, ½ cup sour cream, 2 tsp vanilla extract

Method: Preheat the oven to 170C. Coat two 9-inch-round cake pans with cooking spray and line the bottoms with parchment paper. Whisk the cocoa powder and 1 ½ cups boiling water in a medium bowl until smooth; set aside. Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl until combined. Add the eggs, vegetable oil, sour cream and vanilla and beat with a mixer on medium speed until smooth, about 1 minute. Reduce the mixer speed to low, beat in the cocoa mixture in a steady stream until just combined, then finish mixing with a rubber spatula. Divide the batter between the prepared pans and tap the pans against the counter to help the batter settle. Bake until a toothpick inserted into the middle comes out clean, 30 to 40 minutes. Transfer to racks and let cool 10 minutes, then run a knife around the edge of the pans and turn the cakes out onto the rack to cool completely. Remove the parchment. Trim the tops of the cakes with a long serrated knife to make them level, if desired.

    Marble Bundt Cake

    images

    Time: 1 hour

    Serves: cuts into 8 – 10 slices

Ingredients: 300g butter (softened, plus extra for greasing), 300g golden caster sugar, 6 medium eggs, 150ml whole milk, 280g self-raising flour (plus extra for the tin), 1 tsp baking powder, 1 tsp vanilla extract, 100g dark chocolate (coarsely chopped into chips or chocolate chunks, plus extra for decorating (optional) ), 25g cocoa powder (sifted), 1 tbsp dark rum, icing sugar (optional)

Method: Heat oven to 170C. grease a 25cm bundt ring mould with butter, then dust with flour. Cream together the butter and sugar in a food processor. Beat in the eggs, one at a time, then add the milk. Divide the mixture between 2 large bowls. Sift together the flour and baking powder. Add 150g of the flour to one bowl and fold in carefully with the vanilla, then fold in the chocolate chips. Fold the remaining flour and the cocoa into the other bowl, along with the rum. Spoon the cocoa mixture into the base of the mould, creating a slight trough, then smooth the vanilla mixture on top. This arrangement of the 2 mixtures with the cocoa mixture on the base should minimize the possibility of the cakes sticking. Bake for 50 minutes until risen and set. Run a knife around the inner and outer edges and leave to cool in the tin for about 30 minutes. Put a cake stand or plate on top of the mould and invert it. Leave to cool completely.

So grab your aprons, take the baking tin out, pour in some batter and start baking!

  • Every Plate of Food has a Story to Tell

Every Plate of Food has a Story to Tell

Everyone knows that there are two types of people in the world when it comes to food – those who eat to live and those who live to eat. If you’re the type that lives to eat, then you would know that nothing in the world sounds better than the “ping” announcing that your food is ready. That ping can be the ping of your oven or the ping at a fast food joint, it doesn’t matter. You would know that those clichés where people say that their favorite thing to do is to curl up in the bed with some chocolate pudding and a book or a movie are all true. You would know that if there’s one thing in this world that has the power to make you smile, it’s food.

The biggest dilemma in the life of a foodie who knows to how cook is whether to go out to eat or to stay at home and cook. I’m a foodie. I love cooking. I made my first chapatis when I was six and I woke up in the middle of the night with my stomach rumbling. I didn’t want to wake my mother up so I went into the kitchen and found some left overs, but there were no chapatis. So my six year old self decided that she really wanted to have warm, soft, chapatis and she made them. Of course they were hard and crisp and slightly burnt but that was when I realized that cooking was exciting. After that, I often used to wait for my mother to go take her afternoon nap so that I could go into the kitchen and cook something for myself. I thought one day I would surprise my mother by cooking a meal for her all by myself. That never happened because the first time I cut my finger, I ran to her crying. Nonetheless, almost everyone who is passionate about food and about cooking remembers the first time they made something and how amazing and excited they felt.

Food brings happiness to us in many ways. It’s not just the eating part that makes people happy; it’s also the cooking part. Having a chocolate cake that you baked yourself sure feels amazing. But it feels even better when you’re eating it with a bunch of people who love it and they tell you so.

So when you know how to cook amazing food, which isn’t a difficult thing to do, and you enjoy it, why would you want to go out and eat? I’ll tell you. When you go out and you order something new and you eat it, it gives you a rush because you can’t wait to get home and try making it. Often, you might fail to reproduce that dish. After a point, you even give up. So you go out and back to that place to eat the same thing again and again because that place makes that one particular dish perfectly. And this way, over time, you label places with particular dishes that they make and if someone wants to eat that thing, you know the perfect place to take them to.

A foodie knows that there should be no discrimination between a roadside vendor and fancy restaurant. A nice little dhaba tucked away in some corner has the potential to serve as good food as that fancy place near the fancy mall. The only thing that should matter is hygiene. Not all dhabas are unhygienic and not all restaurants are hygienic. Also, if you’re a student and you keep dining at pricey places, your parents will soon realize that the extra pocket money you’re asking for, is not for ”research material” and that, my friend, is not a good thing. It’s not difficult to get addicted to good food so you need to keep in mind that those pricey places with the orgasmic food are a luxury. They should be treated like the occasional cigarette. You plan on ahead and save up for weeks to eat there. Or you spend the money you were given to buy shoes to eat there and walk around with your toes poking out of your shoes as a punishment. (If, in case, that does happen, you have my sympathies.)

Another golden rule when it comes to food – never waste food. You have a little too much food and none of it can go in the fridge? There are plenty of men, women and children out there who need it. Take a walk after your meal, a healthy habit too, and give it to someone who needs it. Can’t find someone? Put it out with a bowl of milk and the Dog Fairy will make sure it vanishes by the time morning rolls around.

Food, books, pets – to each, their own. Or some people prefer to have a combination of any two or even all three in their lives to be able to call it a perfect and happy life. Whatever the combination be, you need food in there to be happy – or even to simply survive. If you eat to live, slow down once and think about the taste of the food you’re eating, think about the texture, the feel of it and think about the story behind that plate of food because be it the burnt chapatis I made when I was six or be it the chef’s signature dish at a restaurant every plate of food has a story to tell.
