    Craft beer has been on the upswing for years now and is very much a part of the beer drinkers array of options for an afternoon half pint, pint or pitcher.  Mainstream beer companies have of course seen this as an opportune time to join in the fun by producing their own craft-esque beers.  However, there is an undeniable charm to knowing that you are drinking a fine craft beer that has more than a team of marketers behind the taste, ingredient choice and label design.  Craft beer has personality, each small brewery has a tale to tell of its inception, creation and production.  A tale that can be regaled and embellished with each delectable sip of fine craft beer.

    Still not convinced?

    Well, let’s take a look at why craft beer is considered ‘better’ than most mainstream beers by both snobs, hipsters and your bearded bartender friend.

    1) Quite simply, it has more flavour

    There is a weight and density of flavour in craft beer that mainstream beer just does not have.  Being as fair as I can be in my argument, it is worth pointing out that there are no rules when it comes to personal preference, if you enjoy a light beer that is mostly water, then cheers!  No hard feelings, craft beer is just not your thing.  However, if you enjoy a hearty and meaty libation that can take you on a journey through the flavours of each ethically and organically (sometimes) sourced ingredients then craft beer is for you!  Large mainstream companies will often look to the most cost efficient method of mass producing their product, while the craft beer men and women are more concerned with making a great tasting beer than cutting costs.

    2) They are stronger!

    Beer as it was meant to be, strong, flavourful and something to savour.  Craft beer will often have a higher alcohol content compared to mainstream beer.  The weaker, more watery mainstream beers will mean you can drink more of them… and oh yes, spend more money.  By drinking fewer beers, not only will your waistline thank you (debateable), but you will need to hit the bathroom fewer times in one evening.

    3) It’s Healthy???

    Yes, well, maybe.  Depending on the sources of information you favour, craft beer has been shown to have health benefits.  Craft beer does contain nutrients, fibre and antioxidants.  Due to the way that mainstream beer is filtered and preserved, a lot of these benefits are lost.  By no means should you replace your gym routine with a trip to the the pub to order a craft beer through.

    4) Variety is King!

    So if you don’t like one mainstream beer brand, chances are, you will probably not like beer in general.  With Craft beer there are a great many different flavours, consistencies and aromas to explore.  So if you didn’t like one craft beer, try another, who knows… discovering your new favourite drink could be one sip away.

    Ultimately, you should let your own personal preference be your guide.  Trying a lot of different flavours to find your perfect match is preferable to enduring the same, watery lager every time you feel like a beer.  Try a sip of something new, if you don’t love it, no harm done.  Getting away from the familiar comfort of mass produced flavourless beer that must be served at ice cold temperatures to be remotely palatable is your first step into a larger world – a world full of flavour, personality and fun.  If you have the opportunity, meet up with some of the people who make the beer you’re drinking at the brewery.  Hearing someone talk about a subject they’re passionate about is a wonderful thing in its own right.

Cheaper and cheaper burgers and fries combos and the easy accessibility of everything unhealthy is taking this Aryan civilization faster to its unhealthy end than we can possibly imagine.And some who are aware of this gradually surmounting epidemic of obesity turn themselves to starving, or dieting as they more fashionably call it.

    And this is where most of them go wrong. If you out the word dieting on google and search for its meaning, the first result it shows is: Restrict oneself to small amounts in order to lose weight” But this is wrong in its most fundamental sense.     First of all, forget everything that you ever ate anything and that you had a diet schedule planned. Here, we all start afresh. Just like infants do.

    Secondly, many might have said or suggested to you; plan your meals ahead of time. Forget it. Because, food can’t be quantified beforehand. Suppose you worked out a little extra today, won’t you need an extra glass of milk to balance the energy that you’ve lost? So, never plan your eating. Eat, whatever your heart wants, but from the list that we decide here for ourselves only. Now we begin by clearing off all the things that are clichéd and everyone tells you about them. You should eat loads of fruit they provide vitamins, drink lots of water: gives you roughage, gorge on soups: healthy for your body and all that. But doesn’t everybody know this list by heart by now? So, we come down to those Indian dishes that you can prepare in your kitchen while hunger strikes. Let’s start with dinner.

Each idli contains just 39 calories, which is a minimal amount in comparison to a healthy 2,000-calorie daily diet. . Idlis contain no fat, no saturated fat and no cholesterol. Consuming less than 16 grams of saturated fat and 300 milligrams of cholesterol lessens your risk of cardiovascular disease and stroke.

    Going in the reverse order from dinner to breakfast, its time for your evening snack. And what better than dhokla to freshen you up and lighten you at the same time. Yes, it is chiefly made up of Dal and Rice, but don’t cringe as otherwise you would have been gormandizing on chips or samosas for sure. But remember, Dhokla is low in saturated fat, very low in cholesterol, low in sodium, high in dietary fiber and high in vitamin A and C. And for us dieters, low fat is all that matters, right people?

    SPROUTS AND RAITA:

    To your lunch, let’s start by having some Raita, what say? Now, raita as you all know is made by adding fruits, vegetables or any other thing to beaten yoghurt. And the best part is that one serving includes just 60 calories. To the beaten curd one can add grated bottle gourd or some fruits. But if you are in the mood for some crunch, you can very well add Boondi to it. Boondi, is fried, yes. But a handful of pea sized boondis will do your diet no harm.

    With Raita, you can have sprouts as the main course and feel a bit Pseudo-European. Keep the pulses in water overnight and in the morning add a bit of lemon, some spices, some cucumber and your lunch is ready in a jiffy.

    Now, one thing with which we should agree with the hackneyers is that, breakfast should be heavy. And the dieticians have logic and Science backing them too. According to some studies if we consume more calories at breakfast and very less at dinner, this will help you lose weight quicker because if you eat a larger breakfast it will give a kick start to your metabolism and plus you won’t feel all drained and sleepy in that history class of yours. Plus more calories in the breakfast gives you more time in the day to burn them off. For breakfast why don’t we have something milk based, like oats? Well oats take two minutes to cook and trust me, you won’t be able to eat more than one and half cups of it. And hey, no adding sugar at your mom’s back, OK?

    Other than oats, you can also have Daliya in the morning. Daliya or Bulgur wheat in Angrezi, is a very light and healthy option for breakfast. Daliya is an excellent source of fiber that keeps you feeling full and also helps to maintain a healthy digestive system. And just like oats, daliya can be either milk based or oil and vegetable based. Now, a little oil isn’t harmful for your body and don’t cringe if once in a blue moon you are fed up of having only milk based diet for your mornings. So, here we are with a very basic diet plan for you to follow and with just one mantra at the end. Never starve yourself, Never. You need food to live.     Winter Delights: Gajar Ka Halwa and Gujarati Meethi Kadhi

    The frigid winter months of December and January are bearing down upon us, and all anyone wants to do right now is to curl up cosily in their heavy blankets and eat tons of hot, rich food. The harsh weather right now makes the human body crave even more for nutrition, and it is not surprising that some of the best dishes that we know of taste the best in these freezing days. Compared to the year long summer heat in most parts of India, we have a greater appetite for food in the winters. It is in these few weeks that we look with great curiosity towards our kitchens, and wait impatiently for our mothers to emerge out of the area with some aromatic and delicious gastronomic work. Be it sarson ka saag and makke di roti, gulab jamuns, hot coffee, or ginger tea, all of these dishes and more never fail to tickle our tastebuds during the cold season. Here are two easy to cook recipes, one for gajar ka halwa, and the other for Gujarati meethi kadhi, in case you ever need a hot fix for your winter woes.

     

    Gajar ka Halwa

    Also known as gajrela, gajar ka gajrela, and carrot halwa, gajar ka halwa is a South Asian dessert pudding and a winter delicacy in north Indian states. Made by cooking grated carrots, milk, ghee (clarified butter), and nuts together, this dessert is eaten on many festive occasions in both India and Pakistan apart from being available round the year in most sweetmeat shops of the subcontinent. A completely vegetarian preparation, gajar ka halwa is a dish enjoyed by all people, and has been subject to a number of culinary innovations, some of which are a vegan version, red velvet gajar ka halwa, similarly flavoured doughnuts topped with the same, a cream cheese and halwa combination which is the desi counterpart to the carrot cheesecake.

    The dish dates back to the ancient Mughal times, and the word “halwa”, meaning sweet, is itself derived from the Arabic language. Gajar translates to carrot from the Hindi language. While gajar ka halwa may seem like a particularly difficult preparation to pull off in the kitchen, it is actually not. Although the ingredients do take a considerable amount of time to cook fully, gajar ka halwa is a very easy recipe to make provided you have all the cooking materials you need ready at your disposal.

    Recipe (serves three-four)

    Ingredients required:

    • 1 kg of grated carrots, cleaned and peeled beforehand
    • 100 ml of condensed milk
    • Cleaned, preferably roasted, dried fruits and nuts (cashews, almonds, raisins, pistachios)
    • ½ kg of khoya
    • 4 big tablespoons of desi ghee (clarified butter)
    • 1 cup of castor sugar
    • 4 cups of milk
    • Cardamom seeds. Alternatively, you can use one-third of a teaspoon of cardamom powder.

    The steps needed:

    • Put the shredded carrots and milk in a heavy-bottomed pan or a wok on medium flame.
    • Let the carrots soak in the milk to a considerable amount. Let the mixture turn a rich golden-orange colour.
    • Add condensed milk and cardamom and stir for some time.
    • When it is cooked halfway, add khoya, after putting aside some for garnishing. Also add ghee.
    • Once everything is properly mixed, add sugar on a low flame. Take note of the flame and ensure that the sugar does not caramelize in the halwa.
    • Add dried fruits from above, garnish with a little khoya, and serve in bowls. You can also add varakh (the silver food foil) for an aesthetic look.

     

    Gujarati Meethi Kadhi

    Kadhi is an Indian main course dish of desert origins, and was first made in Rajasthan. However, it quickly grew popular with people from other regions of India, and now has different variants according to different states, belonging to Punjab, the Sindh area of Pakistan, Gujarat, Uttar Pradesh, and Maharashtra. While it is a dish best served hot, kadhi itself is derived from curd and yoghurt, which ironically taste best when cold.

    Gujarati cuisine is known for its sweetness, and its kadhi carries the same quality. In our household, Gujarati meethi (Hindi for “sweet”) kadhi is a winter favourite, and its recipe has passed on from one generation to the next, with a few modifications by each. This dish can be had as a drink, and since we already have the salty kadhi of Uttar Pradesh, complimented with besan pakodas (fillets), Gujarati meethi kadhi is served as a hot and sweet beverage mostly in the evenings. It hardly takes much time and effort to prepare, and is the perfect heavy snack that will fill your stomach in between meals. All you need is a bowl, a saucepan, and some easily accessible cooking materials, and a time period of fifteen minutes to spare.

    Recipe (serves two)

    Ingredients required:

    • 2 big tablespoons of besan (gram flour)
    • 1½ glasses of curd
    • Half a cup of water
    • Turmeric
    • Curry leaves
    • Asafoetida
    • A teaspoon of rai (mustard seeds)
    • Two teaspoons of sugar
    • Salt
    • Whole, dried red chillies
    • 2 teaspoons of oil

    The steps needed:

    • Add the besan and curd slowly in a big bowl, stirring slowly so that no lumps are formed.
    • Put a pinch of turmeric in this mixture. Also, add salt according to taste.
    • In a separate pan, put oil and let it heat on a slow flame.
    • To the hot oil, add rai, a little hint of asafoetida, and some curry leaves. Be careful to not let the curry leaves blacken completely because of excessive heat.
    • On a low flame, add red chillies to the pan.
    • Take the besan and curd paste, and pour it in the pan.
    • Stir continuously so that no lumps are formed while keeping the pan on a medium flame.
    • Let the mixture boil, and then pour it in glasses.
    • Top with a few curry leaves and serve hot.

    Making wine at home:

    From thousands of years people are making their own type of wine at home.This can be prepared using any type of fruit but most people prefer to make it with grapes.In this process after mixing all of the ingredients we must leave the wine to ferment and then we have to age it before bottling.By using this simple olden process we can make delicious wine at home.

    Ingredients:

    1) Take six cups of any of the fruit

    2) Take two cups of honey

    3) Take one packet of yeasts

    4) Take filtered water

    Step 1:

    This is the step we have to prepare all our supplies and ingredients first.Along with the wine ingredients we have to take some of the basic supplies so that our wine can age longer without being affected by bugs and bacteria.As we are making it in home we should see that it should not be much expensive.The supplies that are required for making at home are

    1) Take two gallons of glass jar

    2) Take one gallon of glass container having small neck

    3) Take an air lock

    4) Take a thin plastic tube that may be used for siphoning

    5) Take clean wine bottles with screw caps

    Step 2:

    Select any type of fruit for making wine.Most of the people use grapes for the preparation of wine.While choosing a fruit it is better to choose a fruit that is organic as it has to be treated with chemicals if it is not organic.For reduced cost of making this wine take fruits in a farmers market.

    Step 3:

    At first take the fruits and remove the stems and and leaves and clean them thoroughly so that there should not be any dirt or grit.Next rinse the fruit thoroughly and place it in a crock or glass jar.Before crushing we can peel off the skin, but the actual flavor comes from the skin itself.If we peel off the skin then the wine will be more milder.Few think that natural yeasts lie on the skin of the fruit and does not wash it before crushing.

    Step 4:

    Now crush the fruits till the juice comes out of it.This process of taking the juice out of fruit is known as crushing.This process must be done until the fruit juice is about one and half inches from the top of the crock or glass jar.In case if the fruit juice is not till top of the glass jar fill the remaining level with mineral water.At this stage add campeden tablet to the mixture as it releases sulphur dioxide which kills wild yeasts and bacteria.In case if we don’t want to use tablet at that stage add two cups of boiling water to the fruit.

    Step 5:

    Add honey to the fruit juice as it adds sweetness to the wine and also provides food for yeasts.We can also add sugar if we don’t have honey available.

    Step 6:

    Now the main thing yeasts are to be added to the mixture taken and stir them well continuously by using a long handed spoon.For the preparation this is a step is a must and should not be ignored.

    Step 1:

    Now after adding yeasts cover the crock by using a lid such that i must keep bugs away from it and it must allow air to flow in and out.Then tie it with a t shirt at the opening by using a rubber band.Now leave this undisturbed over night by providing it a temperature of 70 degrees.

    Step 2:

    Continuous stirring must be done for every four hours and must recover it such that the mixture starts bubbling so that yeasts start their action.This continuous stirring will help in making delicious wine.

    Step 3:

    Now as the bubbling slows down after few days take this to a glass container with a small neck for longer storage.Now place the small balloon over the opening  to let the gas collected and replace it in a right away.

    Step 4:

    After this process let the wine be stored for few months but at least one month as the age for the wine increases the taste for it also increases.

    Step 5:

    At last preserve the wine by taking it in clean bottles and close it immediately by using a cork.Generally use dark bottles to preserve red wines.Allow it to preserve for longer age or can also take it immediately depending on one’s requirements.

Espresso often has a thicker consistency than the coffee brewed by other methods. The flavours and chemicals in a typical cup of espresso coffee are much more concentrated. Espresso often serves as the base for other coffee drinks such as a latte, cappuccino, macchiato, mocha, or americano. The usual serving size is much smaller in case of this particular beverage. Research states that coffee cultivation originated in Arabia during the 15th century, where coffee was associated with both religious and rebellious political activities. According to Ethiopian culture it’s believed that Kladi, who was a goat herder, had first found the seeds when he noticed that his goats became excited after consuming the beans. Some of the Arabian culture attributes the discovery of coffee beans to Sheik Omar, who was known to have the ability to heal the sick and was exiled to a desert near Ousab. There he found the berries but were bitter in taste so he tried to roast them so it turned hard. It’s believed that Omar then boiled the berries to soften the seed which resulted in creation of a dark liquid. The liquid, when he drank it, it revitalized him sustained him through the period of exile. When Omar came back home, he had bought with him this miracle drug and that how coffee was introduced into Arab and travelled through Egypt and Yemen. Today coffee is considered an important agricultural product and also is regarded as an important export commodity.

    Tea on the other hand is prepared by simply mixing tea leaves into boiling water. Tea is considered to be the second best preferred drink after water. It’s cool and astringent flavour is what attracts so many people, making it the world’s most widely consumed beverage. According to the Chinese legend, the discovery of tea was done by a Chinese inventor named Shennong who invented a tea shredder. During the Tang and Qin dynasty, the popularity of tea was at its peak and also had spread to other regions of Japan, Korea and Vietnam. The cultivation of tea together with jasmine and mallow gave it a distinct taste and aroma.  During the 17th century, the British started consuming tea and also introduced it in India. The practice of drinking tea in Britain was only seen during special occasions like marriages and anniversaries and religious festivals. It was mostly consumed by the royals as tea was expensive and could not be afforded by all. This gave rise to tea smuggling which made tea available for the lower section of the society as well. By the 19th century, tea was consumed by all the sections of the society. When the British had captured India, they wanted to cultivate tea and in order to do that they sent Robert Fortune to china to get some tea seeds. However the plan to cultivate them in India failed due to different weather conditions. However they later found that regions like Assam and the Northeast regions of the country could house the cultivation of this crop and so using the Chinese techniques of cultivation created a tea market in India from where tea was exported to other parts of the world. The price of tea in Europe began to fall with large import of tea from India.

    After knowing so much about both the beverages we still don’t find ourselves in a position to decide which one’s a better choice. So in order to make our task a little simple let’s see which one’s better when it comes to our health and growth. Tea can be of two types, black or green tea. However both theses goods contain a high level of antioxidants called flavonoids. Antioxidants are chemicals which protect tissues from oxidants. Oxidants may damage cells and reduce the immunity. According to a survey done by American Dietetic Association, one in five adults in America prefer tea to other beverages; however these people gained 20 times more antioxidants than non tea drinkers. Other than the benefit of receiving antioxidants, drinking tea also helps in reducing cholesterol levels, blood clots and helps fight inflammation, cancer and various allergies. Green tea is considered the very healthy and is responsible for reducing breast cancer and death rates due to heart diseases.

    Researchers claim that like tea, coffee also contains antioxidants and helps in lowering the risk of liver and colon cancer and diabetes. Some people believe that coffee might not be good for the heart, however it’s not been proved till now and further study in this field is required. Since caffeine content in coffee is high, it’s not recommended for pregnant women and even overdose among youngster may not be a healthy option.

    So according to me tea wins the battle to be a healthy choice when compared with coffee. But this does not mean that coffee can be completely rejected. Controlled quantities of coffee can be consumed for a healthy living.

    Preparation:
