    1. Boil 2 litres of fresh milk and add vinegar or curd or lemon juice to the milk and stir well and keep it aside.
    2. After the milk has been curdled,wrap it in a muslin cloth(a thin delicate sheet) and rinse it with fresh water and squeeze the water.
    3. Now,form it like a ball and place it under a saucepan for nearly 20 minutes.
    4. Then,paneer of 200 gms is ready and we can use it in all foods.

    • 1 onion cut into cubes
    • 1/2 cubed tomato
    • 1 1/2 cup of paneer cubes
    • 1/2 tsp of tandoori masala powder
    • 1/2 tsp of lemon juice
    • 1 cup of hung curd or yogurt
    • 1 1/2 tsp of ginger-garlic paste
    • 1 tsp of red chilli powder
    • 1/2  tsp of garam masala powder
    • 1 tsp of coriander powder
    • 1 1/2 tsp of oil
    • 1/2 tsp of kasturi methi leaves
    • 1 onion sliced for garnishing

    • salt to taste

    Preparing Paneer Tikka

    1. Take hung curd or yogurt in a bowl and beat it until it turns into a smooth paste.
    2. Add all spice powders such as red chilli powder,garam masala,coriander powder,tandoori masala powder and also add ginger-garlic paste,kasturi methi leaves and salt.
    3. Mix well and prepare a  marinade(a mixture where the food is soaked to give flavor).
    4. Now,add paneer and add the capsicum pieces,onions and stir them so that all ingredients are mixed up and leave it for an hour to marinate them.It can also be covered and placed in a  refrigerator.
    5. Now ,take a toothpick and arrange capsicums red and green,onion,paneer in an order.
    6. Switch on the stove and heat tawa and put 1 1/2 tablespoons of oil.After mil heating,lightly fry paneer and vegetables over the heat. and cook them until those items turn light brownish in color for 3-4 minutes.
    7. Now,Paneer Tikka is transferred to a plate and slowly remove the toothpicks by pushing the vegetables into the plate.
    8. Add 1 -2 tsp of lemon juice over the food and garnish them with sliced onions and serve them.

    The bitter gourd or karela is a summer vegetable mainly found in the tropical areas.  It first originated in India and then by the 14th century began to be widely cultivated in Asian countries, Africa and the Caribbean islands.  The edible fruit of this vine is extremely bitter but is a storehouse of iron.  There are different varieties of the bitter gourd, and they vary in size and colour. The medicinal value and antiseptic qualities of this humble vegetable cannot be underestimated. Its juice is often recommended for controlling diabetes, healing stomach ailments and as a natural way to good health.

    The bitter gourd vine is herbaceous and has tendrils which help it to hold on to supports.  The leaves have rugged edges and grow alternatively on the tender stem.  The bright yellow flowers, both male and female are seen on the same plant.  After flowering in June the fruits usually start forming within a few months.  The fruit is oblong in shape, with a spiky outer surface which is bright green in colour.  Flat seeds are found inside the fleshy outer cover.  This vegetable has a watery texture, and is very bitter.  The skin is tender and edible and is eaten green.  When the fruit ripens, the skin becomes tough and bitter to taste and cannot be eaten raw.  On the other hand the pith which becomes dark red in colour is used raw in some salads.

    The different varieties of bitter gourd carry the same properties although they vary in colour, size and appearance.  The white or light green variety is longer in size with less tapering ends and a moderately less spiky exterior.  The smaller, dark green variety with sharp spiky exterior is used as a stuffed vegetable and is popular in Pakistan, Nepal, India and the Asian sub-continent.  This green vegetable is generally eaten in a cooked state, while the young shoots and leaves can be eaten as greens.  The bitter flavour of the bitter gourd makes it an important ingredient in stir fries, soups and in the making of herbal teas and beers.

    In India bitter gourd is cooked differently in the south and north.  The people in north India sometimes cook it as a stuffed vegetable in oil, or cook it separately with tomatoes and potatoes as a subzi and eat it along with roti and curd.  In south India it is cooked using coconut oil, with lots of grated coconut as a thoran, or with fried coconut as a theeyal or pachhadi and is consumed with steaming brown rice.  In Tamil Nadu, the bitter gourd is made as a special dish using onions, lentil and coconut along with tamarind juice.  This is a very popular preparation and is called ‘kattu pagarkkai’. In most of the dishes, a lot of onions are used along with rich spices and tomatoes, which help to lessen the bitterness of the vegetable. The green vegetable is cooked in different forms. In many households, bitter gourd is cooked with meat, eggs, beef, pork or shrimps and use coconut milk for added flavour.  Pickles, soups, curries, stews, chutneys and stir-fries made using this wonderful vegetable are popular delicacies all around the world.

    • Slit open  8 long, slender karelas and clean out the inside
    • Half cook the karelas in salted water with a pinch of turmeric
    • Grind 5 green chillies and 100gms of roasted channa
    • Mix well with salt, garam masala and coriander powder
    • Add chopped coriander and stuff into the slit karela
    • Tie each karela ( boat) with a thin thread
    • Use a shallow pan and heat the oil well
    • Fry the karela on a slow flame and carefully keep turning them over till they turn into a golden brown colour.

    The dish can be served hot with tomato sauce or pudina chutney. This appetizing and spicy dish can be enjoyed with rice, parathas or rotis.

    The bitter gourd can also be used to make a very tangy, sour pickle with many spices and condiments.  This “Hot Karela Achar” goes very well with rice or rotis and can be carefully preserved for some time.

    Directions:

    • Wash and dry karelas well
    • Cut the karelas and De-seed.
    • Chop karelas and few green chillies into very thin slices
    • Rub salt well, squeeze out water and sun dry for one day
    •  Heat one cup of oil, splutter mustard and lightly fry a few methi seeds.
    • Add the dried karela and green chillies, curry leaves and fry till crispy
    • Mix thoroughly with a pinch of asafetida powder and salt to taste
    • Store in dry glass jars when cool and fill oil till top
    • Keep for two days, mix oil well and then serve.

    Spinach is a flowering plant which comes from the family of Amaranthaceace. Mostly found in central and southwest Asia, it’s a plant which can survive throughout the year. The leaves come in various shapes and sizes with leaves of a bigger size found in the base and small leaves found in the higher stems. There are basically three types of spinach which we use. Savoy is a dark green, curly leaf, found in bunches in our local markets. A hybrid variety of savoy is the semi-savoy. The leaves of this variety are curled as well and are grown for both fresh as well as processed industries. Other varieties include the flat and smooth spinach which has broader leaves than savoy. It is grown sold as processed and canned foods, cold soups, baby foods etc.

    Spinach finds its origin in Persia and the neighboring counties. In India it was introduced by Arab traders who had travelled here for other spices. The spinach was a popular vegetable among the Arabs and so they introduced them in all the regions they travelled. By the 12th century, this vegetable had reached Spain which then found its way to France and England by the 14th century. The reason why people became so found of this vegetable is that it grew during the time of spring when vegetables were scarce and Lenten dietary was discouraged. Spinach became an important ingredient in the dishes served to the royals and during wars soldiers were given wine and spinach juice when they suffered from hemorrhage.

    The fresh green spinach leaves is storehouse of vital minerals and vitamins. Vitamin C which is very essential for proper body functioning is largely found in the leaves that are dark green and vibrant. Vitamin K1 , which is also found in the leaves helps in maintenance of bone health. When we consume spinach, the friendly bacteria found in our intestines convert vitamin K1  present in the leaves to vitamin K2  which then produces osteoclasts which is a non collagen protein found in the bone. These acts like anchors and holds on to the calcium molecules in the bones making it stronger. Sunlight is mainly used by leaves during photosynthesis to form the green material or chlorophyll which is something which we studied in school. However what happens further is that this forms the major portion of the molecules called glycoclycerolipids which are rich in health supportive nutrients. According to certain studies, Spinach like other green vegetables like broccoli and cabbage has anti-cancer qualities. They also help to protect and maintain the digestive track, arrest inflammation and strongly prevent the occurrence of prostate cancer. The spinach leaves also contain an abundant supply of some very unique qualities of anti cancer carotenoids called epoxyxanthophylls. It has very powerful anti-oxidant protective qualities and is highly concentrated in beta carotin, luteinzeaxanthen and flavonoids, the main phytonutrient which helps in promoting health. The spinach therefore undoubtedly tops the list of the most nutrient rich healthiest vegetable in the world and having said that it is therefore important to make this an important part of your diet. According to nutritionist, it will be beneficial if we consume spinach 1-2 times per week.

    We would all be familiar with the popular cartoon Popeye the sailor man. The story line of the cartoon was very simple where we have a sailor who works in the docks and is mostly mocked and disturbed by a fellow sailor Brutus who is jealous of him and always finds ways to hurt him or degrade him so that olive chooses Brutus over Popeye as he looks more strong and healthy. The plot is set in such a way that Popeye falls in the trap set by Brutus and by the time pope tries to get out, he kidnaps Olive. Popeye tries his best to rescue himself and Olive but when his out of power and becomes sick and weak fighting the traps laid down for him. When no other way seems useful he takes out a can containing fresh spinach leaves and starts munching and eats them whole. Popeye always carries a can with him and its contents are shown as some kind of power boosters.  As the spinach enters his body he is all power up and his energy reaches the highest possible level and now with all the power back again he fights  Brutus and safes his dear ones. The use of spinach in this cartoon made it famous throughout the world such that it became an important ingredient in the kitchen of every household. Children who earlier did not like spinach started eating them thinking they would became as strong as Popeye and fight their enemies.

    The reason why the cartoonist used spinach in his cartoon was based on a popular belief in those days that spinach had a high quantity of iron and so the cartoonist wanted to show that iron makes the body strong due to which he used spinach in his cartoon. However later it was found that this notion was a mistake done by German scientist Emil von Wolff who due to some miscalculations gave a value for iron which was ten times more than the original content value. This faulty measurement was finally found out and corrected in 1930. However the bottomline fact that spinach made you stronger was always correct.

    Green Beans are popular among vegetarians as well as non vegetarians because of their high nutritional value. Beans are classified into Bush beans, Pole beans, Shell beans, Mottled beans, White beans, Yellow wax beans, Red or Kidney beans, Black beans and Pink beans.

    Fresh green beans are a rich source of dietary fiber, vitamins (especially Vitamin A, Vitamin B6, Vitamin B1, Vitamin C, Vitamin K and Folates) and minerals (Calcium, Magnesium, Manganese Phosphorus, Zinc, Iron and Potassium). Moreover, they are low in calories and contain no saturated fats.

    How to prepare beans before cooking?

    Wash raw beans in cold water. Just before using, remove the strings and trim the ends.

    Green beans can be used in grilled-salads, curries, soups, stews, stir fry (with rice) and be steamed with other vegetables. It tastes brilliant when mixed with butter, meat, seafood, nuts, mushrooms, leafy vegetables, cheese, etc. With anything and everything, it is good to go!

    Bean Enchiladas

    Time: 30 minutes

    Serves: 4

    Ingredients: 1 tsp olive oil, 2 onions (chopped), 280g carrots (grated), 2 – 3 tsp chilli powder, 2 x 400g cans chopped tomatoes, 2 x 400g cans pulses in water (drained), 6 small whole meal tortillas, 200g low-fat yogurt, 50g extra-mature cheddar cheese (finely grated)

    Method: Heat the oil in a large frying pan. Cook the onions and carrots for 5-8 minutes until soft – add a splash of water if they start to stick. Sprinkle in the chilli powder and cook for 1 min more. Pour in the tomatoes and pulses and bring to the boil. Turn down the heat and simmer for 5-10 minutes, stirring occasionally, until thickened. Remove from the heat and season well.Heat grill to high. Spread a spoonful of the bean chilli over a large ovenproof dish. Lay each tortilla onto a board; fill with a few tbsp of chilli mixture, fold over the ends and roll up to seal. Place them into the ovenproof dish. Spoon the remaining chilli on top.Mix the yogurt and grated cheese together with some seasoning, and spoon over the enchiladas. Grill for a few minutes until the top is golden and bubbling. Serve with a green salad.

     

    Broad Bean Bruschetta

    Time: 40 minutes

    Serves: 4

    Ingredients: 300g podded broad beans, 4 tbsp olive oil (plus extra for drizzing, juice 1 lemon, handful mint leaves, 4 slices rustic white bread, 1 garlic clove (peeled but left whole), 140g pecorino cheese (shaved with a peeler)

    Method: Cook the broad beans in boiling water for 2 minutes. Drain, refresh under cold water, drain again and then peel from their skins.Use a masher to roughly crush the beans with the olive oil and lemon juice and then stir through the mint. Season with salt and pepper to taste.Heat a griddle pan; toast the bread on both sides, then rub with the garlic clove. Spoon some of the beans over each slice of bread, scatter over the pecorino and drizzle with more olive oil to serve.

     

    Spanish Bean Stew

    Serves: 4

    Ingredients: 1 tbsp olive oil, 200g chorizo sausage (thickly sliced), 1 onion (chopped), 400g chicken thigh fillets (cubed), 1 tomato (roughly chopped), 410g can cannellini beans (drained), 1 large potato (cut into small cubes), 500ml hot chicken stock, 4 tbsp chopped parsley

    Method: Heat the oil in a large pan. Cook the chorizo, onion and chicken over a high heat for 5 minutes. Add the tomato and cook for a further 2-3 minutes until pulpy.Stir in the beans, potato and stock. Bring to the boil, then cover and gently simmer for 20 minutes until the potato is soft and the chicken cooked through. Stir through the parsley and serve. You can cool and freeze the stew for up to 2 months. To serve, defrost and heat through thoroughly.

     

    Fettuccine with Beans and Pancetta

    Serves: 4

    Ingredients: 100g pack smoked pancetta rashers, 350g fettuccine, 400g runner beans (trimmed and thickly sliced on the diagonal), 6 tbsp crème fraÎche, 15g pack chives (snipped), finely grates parmesan (optional)

    Method: Put a large pan of water on to boil for the pasta. Meanwhile, separate the rashers of pancetta and cook them in two batches (without oil) in a large non-stick frying pan until the fat on the pancetta is golden. Lift out onto a plate to crisp up.When the water is boiling, add salt and the pasta to the pan and boil for 6 minutes. Tip in the beans, quickly return to the boil and cook for about 4 minutes more until both the pasta and beans are just tender.Drain and tip into a large serving bowl. Toss with the crème fraîche, chives or basil and plenty of seasoning and then quickly tear in the crisp pancetta (keeping it quite chunky). Serve with the Parmesan, a simple tomato salad and some crusty bread (optional).

     

    Butter Bean

    Serves: 4

    Ingredients: 1 tbsp olive oil, 4 garlic cloves (crushed), 400g tin chopped tomatoes, 2 tsp sugar, 2 x 400g tins butter beans (rinsed and drained), small bunch basil (chopped)

    Method: Heat the oil in a medium saucepan. Fry the garlic for 1 min, then add the tomatoes, sugar and some seasoning. Tip in the beans and a splash of water. Cover and simmer for 5 minutes, then stir in the basil and serve.
