    DRY FRUITS BURFI-

    Dry-Fruit-Burfi (1)

    Ingredients-

    1 1/2 Cups – Anjeer/Dried Figs

    1 Cup – Khajoor/Dates

    1/3 Cup – Almonds/Badam

    1/3 Cup – Cashew nuts/Kaju

    1/3 Cup – Walnut/Akhrot

    1/3 Cup – Pistachio/Pista

    1/3 Cup – Raisins/Kismiss

    1 tbsp – Gulkand (optional)

    1/2 tsp – Cardamom Powder/Elaichi

    1/4 tsp – Nutmeg Powder/Jayaphala

    1 tbsp – Ghee or Oil

    1 – Sliver Varq/Warq (optional)

    Recipe- Soak anjeer/dried figs in warm water for 15 minutes, strain water and pat dry well. Meanwhile finely chop almonds, cashewnuts, raisins, walnut, pista and dates. You can also pulse in food processor or mixer but don’t make it powder, we need nuts in pieces. Grind anjeer/figs to smooth paste, don’t add water. Heat oil or ghee and add anjeer paste mix well and saute for a minute. Now add chopped dates and mix well, cook for 2 minutes. Add Chopped dry fruits and mix everything well, you will need another spoon or spatula to combine everything. Add cardamom powder, nutmeg powder, gulkand and mix everything well, cook for a minute and off flame. Line a plate or tray with greased butter paper and pour burfi mixture, level well with spatula and later with butter paper, allow mixture to cook completely. Add sliver varq if using and keep burfi in fridge for 20 to 30 minutes, cut in desire shape with greased knife. Store in air tight containers, this burfi stays fresh in room temperature for almost 2 weeks.

    UPPU SEEDAI-

    Ingredients-

    Rice Flour – 1 Cup
    Urad Dal Flour – 2 tbsp
    Butter/Ghee – 2 tbsp
    Sesame Seeds – 2 tsp
    Asafoetida – 1/4 tsp
    Grated Coconut – 2 tbsp
    Salt – to taste
    Water – To knead
    Oil – For deep frying

    Recipe- Heat a pan/wok and sauté rice flour for a minute or until it starts to steam.  Don’t let flour change its color. Sauté for a minute urad flour and coconut. In a bowl sieve both flours and add coconut, salt, sesame seeds, salt, butter/ghee, asafoedtida and rub with hands to get wet sand like consistency.  Now add water in small quantities and mix well to form soft pliable dough.  Keep aside for 5 minutes. Take a pinch and make into small ball and repeat same for rest of dough, arrange in newspaper or kitchen towel.   While making balls don’t apply any pressure, do it gently and don’t try to get perfect round shape.  Heat oil for deep frying and add seedai in batches.  Deep fry in medium-slow flame until golden in regular interval. Drain in paper towel.  Store in air tight container after seedai comes to room temperature.

    SOOJI GUJIYA-

    Ingredients-

    For Outer Layer

    2 Cups – Plain Flour/Maida

    4 tbsp – Ghee or Oil

    Oil – To Deep Fry

    For Filling

    2 Cups – Sooji/Semolina

    3/4 Cup – Mawa/Khoya (optional)

    2 Cups – Powdered Sugar

    1/2 tsp – Cardamom Powder

    1/2 Cup – Grated Dry Coconut/Khopra

    2 tbsp – Raisin

    4 tbsp – Chopped Cashewnuts

    2 tbsp – Poppy Seeds

    Recipe- For outer layer, in a wide bowl take flour, 4 tbsp oil and mix well, add water in small quantity and make stiff dough same like we make for poori, cover with a damp cloth and keep aside until required. In a wok or kadai add khoya/mawa and cook in slow flame for 2-3 minutes or until its melts, loosen up, off flame, keep aside. Dry roast sooji/rawa until light brown and aromatic, keep stirring so it doesn’t get burnt. Powder sugar with cardamom seeds. In a large bowl add roasted sooji/rava, cashew-nuts, raisins, poppy seeds (I didn’t used), dry grated coconut (khopra), powdered sugar and mix well. Add khoya/mawa and mix well with hands to combine khoya with sooji well. If you are not using khoya skip this step. Knead dough again for 4-5 minutes to make it soft and make big gooseberry size balls with dough, roll into thin roti/chapatti of 5′ diameter or size depends on the size of your gujiya/karanji mold. The dough has oil or mooyan as we call enough so I didn’t applied oil or flour for rolling but if you need apply drops of oil or slightly dust with flour to roll dough and don’t worry about the same of roti/chapatti. Grease gujiya or karanji mould with oil slightly and place rolled chapatti on top of it. Place 1 tbsp of filling on one side of partition. Bring another partition together and close it. Press the edges to seal gujiya well and remove excess roti portion from mould and keep it with rest of dough. Press again to make sure gujiya/karanji is sealed well, gently open mould and take out gujiya. Repeat same for rest of dough and prepare gujiya. Heat enough oil for deep frying and drop 3-4 gujiya at time and fry in medium to slow flame until both sides golden brown, do turn 2-3 times gujiya to cook it well both sides, use slotted spoon and drain oil, keep in kitchen tissue to drain excess oil and fry rest of gujiyas/karanji. Allow to cool completely before storing in air tight container.

    EGG PULAO-

    Egg Pulao Recipe is the delicious Indian Egg Dish which is made from boiled eggs and basmati rice. It can be easily made with few ingredients and enjoyed at dinner or lunch.

    Ingredients-

    1 cup Basmati Rice

    4 Eggs

    1/2 teaspoon cumin seeds

    1 green cardamom

    1 star aniseed

    2 peppercorns

    1 onion, finely chopped

    1 bay leaf

    2 tomatoes, fine chopped

    2 green chilies, fine chopped

    1 teaspoon ginger-garlic paste

    1/2 teaspoon red chili powder

    2 tablespoon yogurt (curd)

    1/2 teaspoon turmeric powder

    1 teaspoon crushed kasuri methi (dry fenugreek)

    1 tablespoon oil

    1 teaspoon tandoori chicken masala or garam masala powder

    Few coriander leaves, chopped

    Few mint leaves, chopped

    1 tablespoon fried brown onions (for garnishing)

    2 cloves

    Salt to taste

    Recipe- Soak 1 cup basmati rice in 2 cups of water for 20 minutes. Boil with some salt, drain and keep aside. Make the onions brown. Keep it ready aside, as it will be used for garnishing this Pulao. Boil 4 eggs in water, cool down and then deshell them. Cut each boiled egg in 2 pieces and keep aside.

    Heat 1 tbsp oil in a deep shaped vessel and add 1/2 teaspoon cumin seeds, 1 star aniseed, 1 green cardamom, 2 cloves, 2 peppercorns and 1 bay leaf. Saute for a few seconds, till the cumin seeds starts spluttering.

    Now add 1 fine chopped onion along with 2 fine chopped green chilies. Saute for a while and quickly stir in ginger-garlic paste.

    Cook on a low flame, till the onion turns little brown and then add 2 chopped tomatoes. Mix well and leave to cook for 2-3 minutes on low flame, till the tomatoes turns mushy and little watery. Now add 2 tbsp yogurt and mix well. Cook for one more minute. Mix in red chili powder, turmeric powder, tandoori masala powder and salt to taste. Carefully place the pieces of boiled eggs. Now stir gently and add boiled rice. Spread little oil all over on rice. It gives a nice texture to the Pulao. Finally garnish it with some brown onions, coriander leaves and mint leaves. Mix slowly and cover the vessel. Leave to cook on low flame for a couple of minutes. Egg Pulao is ready to serve with Salad and Raita or enjoy as it is.

    EGG KEEMA-

    Keema is traditionally a flavorful minced meat dish said to have originated in Persia but extremely popular in the Indian sub-continent.

    Ingredients-

    Oil – 2 Tbsp
    Bay Leaf – 1
    Cinnamon Stick – 1 inch piece
    Black Cardamom – 1
    Green Cardamom – 2
    Whole Cloves – 2
    Onion – 1 large, finely chopped
    Ginger – 2 tsp, minced
    Garlic – 2 tsp, minced
    Green Chilies – to taste, finely chopped
    Turmeric Powder – 1/2 tsp
    Red Chili Powder – to taste
    Salt – to taste
    Coriander Powder – 2 tsp
    Cumin Powder – 1 tsp
    Tomatoes – 2 large, pureed
    Hard Boiled Eggs – 6, peeled and grated
    Frozen Green Peas – 1/2 cup
    Garam Masala – 1/2 tsp
    Water – 1/2 cup or little more
    Cilantro – finely chopped for garnishing

    Recipe- Heat Oil in a medium non-stick pan on medium heat.  Add Bay Leaf, Cinnamon Stick, Black Cardamom, Green Cardamom and Whole Cloves. Stir for 30 seconds. Add Onions and a little salt, mix well, cover and cook for about 15 minutes stirring frequently. Add Ginger and Garlic, mix well and cook uncovered for another 5 minutes until Onions turn brown and oil starts to separate from the mixture.
    Add Green Chilies and Tomatoes, mix well, cover and cook for about 10 minutes. Be sure to stir a few times in between. Remove cover and continue to cook until oil starts to separate from the mixture again. Add Red Chili Powder, Turmeric Powder, Coriander Powder and Cumin Powder. Mix well.
    Add grated hard boiled eggs, salt and a little water and mix well.
    Add Green Peas (cooked in the microwave for 1 minute with a little water) and Garam Masala and cook for 2-3 minutes. Garnish with fresh Cilantro. Your dish is ready.

    EGG PARATHA-

    Ingredients-

    2 cups wheat flour

    7 eggs

    1 tbsp ghee

    1 small onion, finely chopped

    1 small tomato, finely chopped

    1/2 teaspoon turmeric powder

    1/2 teaspoon red chili powder

    1/2 teaspoon cumin seeds

    1/2 tsp black pepper powder

    2 green chilies thinly chopped

    Few coriander leaves, finely chopped

    Cooking oil

    Salt to taste

    Recipe-Beat 6 eggs in a bowl and add 2 fine chopped green chilies, 1/2 teaspoon black pepper powder, chopped onion, tomato, few chopped coriander leaves and salt to taste.

    Mix it well and keep aside.

    Now take a big bowl and mix wheat flour, 1/2 teaspoon red chili powder, turmeric powder, cumin seeds, ghee, coriander leaves and salt to taste. Also beat one egg in it.

    Knead a smooth and pliable dough with help of water.

    Heat tawa on high flame and make 6 equal sized balls from the prepared dough. Take one ball or portion and make a small roti out of it. Apply little oil, fold and roll again just like we roll Indian chapatti.

    Drizzle few drops of oil on heating tawa, reduce the flame and place the rolled out roti in it.

    Cook for 2 minutes and then spread some mixture all over on it. Spread only the egg mixture of one egg, so that we should be able to make 6 egg parathas out of it.

    Cook on low flame till the paratha become fluffy and golden brown in color.

    Fold and flip it. Cook from another side as well for 1-2 minutes.

    Once the egg paratha is cooked well, that is when it is browned well, the egg mixture has also browned and cooked like an omlette, then the parathas are done.

    Your egg paratha is ready. You can cut into some pieces just before serving.

    steps to Prepare Blackberry Mojito:

    1. Its a soft drink which can also be prepared at home very easily within less time.
    2. Just grind some required amount of blackberries and add some mint leaves in a blender and keep it a side
    3. To sweeten the drink add some chilled sugar syrup or essence to the mixture and stir well
    4. Next squeeze a lime into a jar and if possible add white rum which is optional
    5. And now add the blended blackberry and mint leaves into the jar in lime juice and shake it with a cocktail shaker or just add them all again in a blender for just 2 minutes
    6. Now take a glass and pour the required amount of prepared cocktail into it and top with some soda and ice cubes and decorate with a lime peace and blackberry and a mint leaf

    Steps to prepare raspberry smoothie:
    Ingredients:

    steps to prepare Rose Milk Ice Apple:

    • Boil thick milk in a vessel and cool it in a refrigerator for 1-2 hours
    • Peel the Ice Apple (nungu) and cut into  peaces
    • after 2 hours mix rose syrup to the milk and add sugar and blend it for  2 minutes
    • and then finally add nungu and serve it chilled

    Pakora is a fried snack. When the weather is rainy and you have your family at your home then the best way to enjoy the monsoon is by making Pakoras for them. Different people of the family have different tastes so, here are some recipes for you to make the monsoon days more enjoyable.

    BESAN KE PAKODE-

    Besan Ke Pakode is the most delicious snack dish made with besan, onion and other spices. It is all time and any time favorite dish of elder ones and younger ones. In my home twice a week it is a compulsory tea time snack in the evening. You can serve them as an evening snack or a morning breakfast, they are all time tasty and mouthwatering.

    Ingredients-

    1 finely chopped big onion, 1/2 teaspoon red chili powder, freshly chopped cilantro, salt for taste, 2 cups besan, 6 finely chopped green chillies, a pinch of baking soda, and oil to deep fry.

    Recipe- Combine green chillies, onion, salt, besan, red chili powder, baking soda and lots of fresh cilantro in a mixing bowl. Mix all the ingredients well and add water to make a medium thick batter. Heat up a pan and add suitable quantity of oil to deep fry. As oil heats enough, then add a big spatula of prepared batter. Turn to fry from both the sides and when half fried, then take out from the oil. Then leave it to cool. Now again pour a spatula of batter in the hot oil and take out from the oil when half fried. Leave to cool. After few minutes when the half fried big pakoda is cool enough, then make small-small pakode from that big pakoda. Again deep fry in hot oil for few seconds, lower the flame. Turn and fry from all the sides. Take out from the oil and keep on absorbent paper. In this way make small-small pakode from each big pakoda. Serve hot with Indian flat bread and accompanied by green chutney or tomato sauce.

    ONION PAKODAS-

    Ingredients-

    5 large onions, 1/2 teaspoon minced ginger, 4 teaspoons chopped cilantro, 2 teaspoon red chili powder, 1/2 teaspoon turmeric powder, salt to taste, 3 teaspoon rice flour, water as per needed, 3 green chillies, 2 teaspoon lemon juice, 2 teaspoon chopped curry leaves, 1/2 teaspoon coriander seed powder, 1 teaspoon cumin powder, 1/2 cup besan, 1/4 teaspoon cooking soda, oil 3 teaspoon to deep fry.

    Recipe- Peel, rinse and slice onion. Finely chop green chillies, coriander leaves, curry leaves, mince or grate ginger.  Meanwhile in a wok start to heat oil. In a wide bowl take sliced onion, green chillies, coriander and curry leaves, ginger, red chili powder, turmeric powder, cumin powder, coriander seeds powder and salt. Mix everything well. This step helps to mix onion with all spices and onion pieces gets separated nicely. Now add chickpeas flour/besan, rice flour. Mix again everything to combine flour with onion pieces. Now start to sprinkle water and mix well to bring everything together. Go easy on water as onion and salt release water too. Add lemon juice mix and then add 3 teaspoon of hot oil and mix again. Check for salt, spices and adjust anything if required.  Drop around small amount of mixture in oil with hand or using a spoon, make 6-7 pakoda in a batch. Make pakoras of the size you prefer small, medium or big and cook in medium flame until all sides are golden brown. Drain pakoda in kitchen tissue and cook remaining pakoda in batches. Serve them hot with chutney or tomato sauce.

    HARI MIRCH KE PAKODE-

    Ingredients-

    4 chillies, oil for deep frying

    For the batter- 1 cup besan, 1/2 teaspoon garlic paste, salt to taste, cold water, 1/2 teaspoon garlic paste.

    For the filling- 1 boiled and mashed potato, 1/2 teaspoon zeera, 1/2 teaspoon ginger paste, salt, 1/2 teaspoon garlic paste, 1/2 teaspoon sugar.

    Recipe- In a bowl mix all the filling ingredients. In another bowl mix all the batter ingredients. Adjust the water amount keeping the consistency medium-thick. Batter should not be too runny. Fill the deseeded chillies with the prepared filling. Dip in the batter and deep fry till golden and crisp. Serve with pudhina chutney or sauce.

    ALOO PAKORA-

    Ingredients-

    2 large potatoes, 2 rice flour, 1 teaspoon red chili powder, 1/4 teaspoon cooking soda, water as needed, oil to deep fry, 1 cup besan, 1 sprig chopped curry leaves, 1/2 teaspoon turmeric powder, salt and 2 teaspoon hot oil.

    Recipe- Peel, wash and dice potatoes, transfer in a large bowl and add rest of ingredients except oil. Give a good stir, now add water 1 teaspoon at a time and mix until everything comes together, this doesn’t require so much of water so keep adding water only in less quantity. Heat oil, take 2 teaspoon of hot oil and mix with potato mixture.   Scoop a spoon of batter and drop in oil, do this 4-5 times to get 4-5 pakoras and fry until golden brown in medium heat.
    If using hand, scoop around 4-5 pieces of potato for one pakoras and deep fry. Have it with coconut chutney, sauce or just with hot tea/coffee.

    PANEER KE PAKORE-

    Ingredients-

    1 liter milk, 1 lemon, 4 teaspoon tomato sauce, 6 teaspoon bread crumbs, 2 teaspoon flour, salt, finely chopped green chili, 2 teaspoon finely chopped green coriander, 4 big size boiled potato, 4 teaspoon green chutney, 1 packet potato wafers, oil and black pepper powder.

    Recipe- First, boil the milk, add green coriander, green chili, lemon juice and curdle the milk. Remove the water, put the cottage cheese in muslin cloth and place some weight on it. When the paneer sets, cut them into 5 cm pieces. Mash the potato and add salt and pepper to it. Add water to the flour like it is done when bhajiyas are made. Now, take two pieces of paneer, apply green chutney on one side and stick them together. Take mashed potatoes on a palm and spread it. Apply tomato sauce on it. Place the paneer on it and cover the paneer with the mashed potato-sauce mix. Shape the paneer. Dip this into batter and coat with bread crumbs. Deep-fry it. Serve with green chutney and potato wafers.

    Heat 1 tablespoon oil in a pan and add a green cardamom. Reduce flame and add 50g dalia. Roast till light brown. Add water, 100ml milk and sugar to taste. Cook on slow fire till dalia is soft. Sprinkle 1 teaspoon chopped almonds and 1 teaspoon raisins. On the side have a cup of chopped ripe mango.

    • Tomato sandwich with cucumber salad

    Spread 2 slices of whole wheat bread with 1 tablespoon low fat mayonnaise. Top with 4 thick slices of tomato. ¼ cup fresh basil leaves, 1 teaspoon mixture of extra virgin olive oil, fruit vinegar, salt and black pepper to taste. On the side, serve with 1 cup diced melon and cucumber salad: toss 1 cup diced cucumber, 2 tablespoon pomegranate seeds, 2 tbsp vinegar seasoned with chopped mint, sugar and salt.     • Kaala channa with brown rice

    Boil 50g previously soaked channa. In a pan, heat 2 tbsp oil, add 125g grated onion, 200g blanched and chopped tomatoes. When done, add 1 ½ tsp ginger garlic paste and cook for 3 minutes. Add spices (1 tsp each of dhania and jeera powder, ½ tsp each of haldi and chilli powder) and salt and fry for 2 minutes. Add channa and cook. Use water as per curry requirement and cook on slow fire for 15-20 minutes. Have it with 50g boiled brown rice.

    NUTRITIONAL INFO: 557 kcal, 18.8g fat, 4.5g fibre.

    • Stuffed roti with pudina raita

    Prepare dough with 80g wheat flour, pinch of salt, water to knead and 2 tsp oil. Divide it in two. Roll out each portion to 5” diameter. Place a filling of 50g boiled, mashed, mixed vegetables (beans, carrot, potatoes and seasonal vegetables), ¼ tsp jeera powder, pinch of garam masala, chopped green chillies to taste, ½ tsp chopped fresh dhania and salt.  Roll carefully and cook on a hot tawa. Brush each side with ½ tsp of oil and lightly brown. Serve hot with potato and mint raita: 100ml dahi seasoned with ½ tsp roasted jeera, ½ tsp powdered sugar, black salt to taste and 1 tsp chopped mint and 40g boiled and diced potato.

    • Grilled coconut masala fillet

    Wash and dry 200g fish and Make shallow slits on both sides and rub with ¼ tsp salt and 1/8 tsp haldi. Leave for a few minutes and then rub 1 tsp oil on both sides of the fish. Grill till brown. Grind to a paste 1 green chilli, 2 cloves garlic, 1g ginger, 2-3 peppercorns, ¼ tsp jeera. Mix this in ¾ cup coconut milk. Add ¼ tsp haldi, salt and few curry leaves and cook till the gravy is thick. Add the grilled fish and cook for 5-8 minutes. Before serving add a few drops of lemon juice. Serve with 50g brown rice.

    We have come a long way since the days when veggies meant overcooked carrot and a lump of stodgy potato. It’s a great treat to have the list of food choices we enjoy nowadays. But the pretentious language that’s built up around dinning is enough for us to grind our teeth so hard that whatever we choose to eat will soon need to be consumed through a straw.

    Celebrity chefs need to take a large share of blame. Who cares if back in the kitchen (preferably a closed kitchen, out of eye line and ear shot of the dinning table); they call the meaty component of a dish “the protein”? Thanks to legions of professional cooks fleeing the kitchen to bask in the glow of TV studios, we all have seen this. But when the suburban cooks start talking about balancing the protein, something’s gone awry. By all means, the chef, ask your apprentice to “check the protein on the grille,” if you must; by the time it makes it to my table, I want to hear it as a chop. If ostentatiously basic terms are annoying, the absurdly florid ones are positively infuriating. Even the fast food chains aren’t above trying to co-opt the English language to confer prestige upon themselves: the staffs who prepare food at Subway are officially known as “sandwich artists.” It’s time for a return to reality.

    Even the street restaurants these days offer you a list of dishes and drinks with the names and information which go straight over our heads, with this they try to show you the intelligence and ability of the chefs, this makes really hard to even order what you desire.

    Haute barnyard- 

    Not satire, nor a criticism, but a tern coined by New York magazine’s Adam Platt to describe basic, good quality seasonal ingredients served up at hugely inflated prices in high- end restaurants. These are rare and very specific in their taste.

    Deconstructed-

    Translation: if you didn’t know what it was meant to be, you’d never recognize it. For example, for serving a boiled egg we mix core ingredients such as tuna, green beans and olive. In a deconstructed version, the egg might be infused with tuna; green beans might be mere smear of sauce on the plate, and the olives might se served separately, possibly to the neighboring plate. This is like experimenting with the ways of serving and mixing the ingredients.

    Mouthfeel-

    A highly technical and self important way of describing the way food feels in your mouth. This word requires you to give feedback of your taste buds through your expressions after having the food.

    EVOO-

    Short for “extra virgin olive oil.” Believe it or not this word has actually made into at least one dictionary. It’s also the priciest version of OO-prompting the new extra virgin coconut oil.”

    Compote-

    you’ve probably been eating compote since you were a child, you just didn’t know it. Its fruit stewed in sugar syrup. Yes, just like mother used to make, but at a price she’d assume was a misprint.

    Wilted-

    This used to be a bad thing-who would want to eat wilted veggies? Now it describes: a) greens that have been lightly cooked; and b) diners who have admitted defeat in the face of chef’s pretensions.

    Muddled-

    Cocktail ingredients, such as fresh lime or mint, which have been bashed about a bit with a pestle rather than chopped or blended.

    Molecular gastronomy-

    Molecular gastronomy is commonly used to describe a style of cuisine in which chefs explore culinary possibilities of borrowing tools from science lab and ingredients from food industry. All cooking relies on the change that heat produces in molecules, so “molecular gastronomy” (MG) is technically a redundancy. But that hasn’t stopped being taken up by the chefs and foodies around the world, who use it as an umbrella term to mean “cooking” but not as you and I would recognize it.

    Sous vide-

    Beloved of MG enthusiasts, this is long, super slow cooking in a low temperature water bath or in a temperature controlled steam environment for longer than normal cooking times. The intention is to cook the item evenly, ensuring that the inside is properly cooked without overcooking the outside and retain the moisture. It has become a common feature in television cooking shows. And for mere $900 a home version of the equipment could be yours.

    “Chef’s special sauce” (what are all the others- ready-mix in a jar?), and “pan-fried.” (As opposed to waiting for the pavement outside to get hot enough, perhaps?)

    The worst part of it all is that this overdone approach is unnecessary-sometimes the truly great chefs know. As acclaimed British restaurateur Alastair Little once put it, “you don’t want to read that your squash blossoms were handpicked underwater by Panamanian virgins. All you need to know are the primary ingredients, the main method of cooking and perhaps where the food has come from.” His compatriot Fergus Handerson shows how it should be done, at the acclaimed St Jones Bar and Restaurant in London. Sample entries from the bar menu: “Gull’s Egg and Celery Salt”; “Cheese and chutney sandwich”; Cured beef, Beetroot and Red Cabbage.” Now that’s appetizing.

    Hot Soups:

    Vegetable soups are a great option to indulge in the rainy season. Warm nutrition-packed veggie soups will not just help you stay away from cold and flu, but also help you stay healthy and hydrated.

    Vegetable soups are also the easiest thing to cook, among other soups.

    Ingredients:

    1 tablespoon of olive oil

    1 onion, diced

    3 cloves of garlic, minced

    2 potatoes, diced

    2 carrots, diced

    1 cup of green beans, cut into smaller pieces

    2 cups of spinach*

    1 can of diced tomatoes

    2 tablespoons of tomato passata

    4 cups of chicken stock

    Salt and pepper

    Sour cream (optional)

    There are no hard and fast rules.Quantities of vegetables can be adjusted according to your taste and requirement and you are allowed to use any vegetables that you have on hand.

     

    Method:

    1. In a big saucepan on low to medium heat, add oil and saute the onion for a couple of minutes

    2. Add garlic, saute for a further minute

    3. Put heat up to medium and add all the vegetables to the saucepan, saute for five minutes

    4. Add diced tomatoes and passata, stir through for a minute

    5. Add chicken stock and bring it to the boil

    6. Turn down the heat and let it simmer on low to medium heat for 25-30 minutes – add salt and pepper to taste

    7. Serve with crusty bread and a dollop of sour cream (optional)

     

    Tea:

    Have tea, especially herbal ones- this will keep bouts of influenza away. Herbal teas are also good for digestion. Now there are two methods you can use. One of them is to buy herbal tea bags, in which case, all you have to do is dip them in hot water and add milk and sugar as per instructions.

    Ginger tea, however, is another easy alternative.

    Ingredients

    • 4 cups water
    • 3-4 black tea bags or 3-4 tsp black tea leaves
    • 2 inch ginger for a strong taste or 1 inch ginger for a milder taste, peeled & either crushed or grated.
    • 3-4 cardamom, crushed or powdered in a mortar-pestle(optional)
    • ½ to ¾ cup regular milk or cashew milk or soy milk – add more if you want a milky tea
    • 8 tsp unrefined organic cane sugar or add more for more sweetness

    Instructions

    1. In a saucepan or kettle, add the water, crushed ginger and crushed cardamom with the peel.
    2. boil this water-ginger-cardamom mixture for a good 6-7 minutes, till the color of the water changes to a mild yellowish hue. the ginger releases its juices and flavors in the water and thus the color of the water changes.
    3. add sugar and simmer for a more of 1-2 minutes.
    4. now add the tea leaves or tea bags and simmer for 2-3 minutes till the water gets a deep hue of red.
    5. add milk. simmer the tea for 2-3 minutes if using regular milk or soy milk.
    6. if using cashew milk or almond milk, then just stir the cashew milk with tea and remove from pan as otherwise heating further would cause the cashew or almond milk to become slimy and separate.
    7. strain the tea through a strainer right into the cups.
    8. serve the hot ginger tea or chai or adrak chai with indian snacks like pakoras or samosas. you could also serve the ginger tea with biscuits or cookies.

    Pakoras:

    Mouth watering pakoras are yet another dish that are a must have during the rainy season. A cup of hot tea and a plate of pakoras are an unbeatable combination. You can choose from various kinds of pakoras ike onion pakora, spinach pakora, potato pakora, paneer pakora, green chili pakora and it goes on. Here’s how you can make Onion Pakoras.

    Ingredients

    • 2 to 3 medium sized onions
    • 2 cups gram flour or besan
    • ½ tsp red chilli powder
    • ½ tsp garam masala powder
    • ¼ tsp turmeric powder/haldi (optional)
    • ¾ tsp ajwain or carom seeds
    • A pinch of asafoetida/hing
    • Oil for shallow frying or deep frying – sunflower oil or any neutral flavored oil
    • water as required
    • salt as required

     

    Instructions

    1. Peel the onions.
    2. Rinse and slice them thinly.
    3. Add the chilli powder, garam masala powder, asafoetida, salt and chick pea flour to the sliced onions.
    4. Add water and mix it to a thick and smooth consistency.
    5. Add little water in the beginning as the onions will release water later and so the batter becomes too watery.
    6. The pakoras won’t turn out good if the batter becomes watery.
    7. You can add more besan if you feel the batter is not thick and smooth. You can always adjust the content of besan and water by adding it more if you feel you have not got the right consistency.
    8. Now heat the oil in a deep frying pan. Take a teaspoonful of the onion batter and add it in the oil. On a medium heat fry the onion pakoras till golden brown.
    9. Serve onion pakoras hot with tomato sauce, green chutney and bread or pav.

    When you want a sumptuous breakfast, that too under 150 bucks, where do you go?

    You go to Blue Sky Café.

    With burgers and grilled sandwiches priced in the range of 55 to 100, and mouth watering omelets, and yummy milkshakes with just the right amount of sugar – there seriously ain’t much to think about, is there?

    I breakfasted there on 10th of this month; had a Mushroom Chicken Cheese Omelet with some toast and shot all the cheese down (tried) with a glass of Hot Lemon. The food was well-prepared and simply delicious.

    I seriously need to thank Rachaita (college buddy) for taking me to all these awesome food places. The last time we were internship hunting, we ended up having Chilly Pork (around Rs 200) at Chung Wah, a splendid restaurant in Chandni Chowk (mind you, if you do not know where it is, ASK! Not that people were of much help in our case; we ended up walking for more than 40 minutes trying to locate the place.)

    And how can I proceed without sharing a home-made recipe of the divine Chilly Pork?

    Time: 40 minutes

    Serves: 4

    Ingredients: 800g pork fillet (cut into thin slices), 1tbsp soy sauce, 2 tbsp mirin, 2 tbsp hoisin sauce, 2 tbsp sesame oil , 1 tsp dried chilli flakes, 3 tbsp sunflower or vegetable oil, 4 garlic cloves crushed with the flat of a knife, 3 red chillies (cut in half lengthways, de-seeded), 6 spring onion bulb (halved), 1 tbsp soy sauce, 2 tbsp granulated sugar, 2 tbsp roasted peanuts, 350g jasmine rice (steamed)

     

    Directions: Mix together the soy sauce, mirin, hoisin sauce, sesame oil and chilli flakes in a shallow dish. Coat the pork in the marinade and chill in the fridge for 15 minutes. Heat a wok over high heat and add one tbsp of oil. Add half the pork and stir-fry for 1-2 minutes. Remove pork from wok and stir-fry the remaining pork for 1-2 minutes. Remove the pork from the wok. Heat the remaining tblsp of oil in the wok and add the garlic, chillies, one tbsp of water and the onions. Stir-fry for 1-2 minutes. Cover with a lid and cook for another 1-2 minutes. Add soy sauce and sugar and return the pork to the wok. Cook for a final minute. Garnish with roasted peanuts and serve with steamed rice.

     

    The other day, on our way to browse books in College Street, we stopped at Dilkhush, which is situated exactly opposite to the famous sari shop, Adi Mohini Mohon Kanjilal. And Google to the rescue, the specialties are: Mutton Breast Cutlet and Dimer Devil (Devilled Eggs). As expected, we had both. The total bill came down to a mere 113 bucks. Well, about the food – the crunch, the aroma, the taste – purely nectarous. So, I’ll just keep my mouth shut and allow your taste buds to do all the talking.

    Ingredients:

    For Marinating- 8 pieces mutton ribs or chops, 2 tsp ginger paste, 2 tsp garlic paste, 1 tbsp of mint leaf paste or coriander paste, 1/2 tsp of coriander powder, 1/2 tsp of cumin seed powder, 1 tbsp of golden fried jullienes of onion, 1/4 tsp garam masala (powder of equal quantity of cardamon, clove, cinnamon sticks), 2 tsp of lemon juice

    For the batter: All purpose flour, 2 eggs whites, bread crumbs, pinch of baking powder, oil

    Directions:

    To prepare the meat- Take the mutton chops/mutton ribs and flatten the meat using a wooden hammer or any heavy kitchen tool. the flesh on the bone should be scrapped. In the marination bowl add all the marination ingredients and mix well with yogurt or lime juice. Add the mutton chops and smear the marination on it. Refrigerate it overnight. Add the Baking powder with the flour and sieve it.

    To fry- Take the Mutton chops and dip it in egg white. Dust it with flour and then coat it with bread crumbs. Take a heavy bottom flat frying pan. Add Oil and let it heat up. Slowly add the Mutton chops and fry till golden brown. Serve it hot with cold coriander chutney

     

    Devilled Eggs

    Serves: 2

    Ingredients: 3 eggs, 1 medium potato, 1 medium onion, carrot or beet, Other vegetables as per availability, ginger and garlic, green chilies, hing (asafoetida), jeera (Cumin), garam masala powder, bread crumbs, maida

    Directions: Boil 2 eggs and 1 potato for 15 minute.  Cover the eggs with at least an inch of water. Cut onion, chilies, beans and grate the carrot/beet. Drain hot water, pour cold water (makes peeling off easier) and crack the egg shells. Cut the boiled eggs length wise and pop out the egg yolk in a separate container. Add peeled off potato and the vegetable mixture to the container. Add salt, pepper to taste. Mash them well. Heat a frying pan; put some cooking oil and then the onion pieces. Add the mashed potato-yolk-vegetable mixture. Fill the egg halves with the mixture. In a separate bowl, break an egg carefully and add a spoon of Besan. Add salt, pepper to taste and blend it well. On a pan, pour some bread crumbs. Heat a frying pan and add oil. Follow the sequence – roll the stuffed egg half in egg besan mixture, then in bread crumbs and then lower carefully on the heated oil. Fry well. Do this for each stuffed egg half.

    • Tomatoes

    Preparation method:

    1. Boil tomatoes along with ginger and add salt .and boil it still it is completely cooked.
    2. Now grind the tomatoes with ginger garlic paste until the ingredients are completely smashed smoothly
    3. Now take the mixture in the bowl add some butter cream with pepper powder sprinkled on it
    4. You can also use coriander to sprinkle on the soup which tastes good

    Steps to prepare tomato raita

    1. Take thick curd in a bowl and beat it until it becomes smooth

    3. Now add the diced tomatoes , finely chopped  green chilies to the curd
    4.  Now add cumin powder and salt to the mixture
    5. Mix the mixture well and add more salt if required

    • Well ripened tomatoes
    • Coconut milk prepared from raw  fresh coconut by grinding the coconut peaces in the grinder and squeezing the milk from the paste yo u can prepare coconut milk
    •  Chili powder
    • Turmeric powder
    • Asafoteda or Hing
    • Cumin seeds
    • Salt to taste
    • And Oil

     

    Preparation method:

    1. Heat the vessel and add oil and wait till it gets heated up
    2. Now add cumin seeds and a pinch of Asafoteda when it splutters
    3. Now add dices tomatoes and then add  1/2 spoon of red chili powder and turmeric
    4. Let the tomatoes cook for 5-7 minutes
    5. When the tomatoes are completely cooked add the coconut milk and stir well
    6. Now let the mixture boil for just 5 minutes and then bring down the stove flame to simmer
    7. Now the recipe is ready to serve .

     

    Tomato chutney

    Ingredients:

    • Tomatoes
    • Dry Red chilies
    • Garlic
    • Mustard seeds
    • Curry leaves
    • Oil

     

    Method to prepare:

     

    1. Heat a pan and add dry red chilies and garlic cloves
    2. Fry them still they turn into brown color
    3. Now add tomato peaces into the pan and fry them until they are cooked completely
    4. Now remove the pan with tomatoes from stove and allow it to cool
    5. After few minutes add this full mixture into a grinder and make it into smooth paste
    6. Now in another pan heat the oil and add mustard seeds to the heated oil and allow it to splutter and next add curry  leaves for thadka
    7. Now pour the paste tomato paste into the pan
    8. Now the chutney is ready to eat .

     

    Tomato Vermicelli / Bambino recipe

    • Bambino/semiya
    • Tomatoes
    • Red chili powder

    • Coriander leaves
    • Onions
    • Green chilies
    • Turmeric powder
    • Curry leaves

    Method to prepare :

    1. First roast the Bambino in en empty vessel without any oil just dry and keep at a side .
    2. Now heat a vessel and add oil and then add curry leaves,chopped onions ,green chilies and now fry them nicely .
    3. Now add little turmeric powder and one spoon chili powder and then add tomato peaces and fry them still they are  cooked properly .
    4. Now pour one mug of water into the mixture and little salt to taste and allow them to boil for about 10 minutes
    5. After that add the roasted bambino and let them boil still the bambino is cooked properly .
    6. Now just simmer the stove and leave it for about 10 minutes still they are completely cooked
    7. Finally the bambino tomato recipe is ready to eat
